This alcoholic beverage called cheong myeong translates to "clear day," making it an apt choice for celebrating the start of the new planting season. Cheong myeong is also one of the 24 seasons in the lunar calendar and falls around April 20th.
This light and crisp alcohol has a sweet aroma of hay with a balanced blend of syrupy sweetness and acidity, complemented by apple notes and a slight cheesy flavor, possibly brie, and hints of licorice. It pairs well with pasta dishes, cheese plates, or as a post-meal drink.
The secret method used to make cheong myeong has been passed down through generations and involves fermenting wheat and glutinous rice for 100 days, resulting in a 17% alcohol content. The Kim family, who brews cheong myeong, had to halt production during Japan's occupation of Korea, but Yeong-Gi Kim revived the recipe in 1986.
The recipe has since been passed down to Yeong Seop Kim, who still brews it today. It is recognized as a cultural asset in Chungbuk and made at Cheong Myeong Ju Brewery in the city of Chungju.
